Spicy Louisiana Bayou Fried Fish

  1. Place fish fillets in large bowl.
  2. Pour sufficient Original Louisiana Hot Sauce over fillets and marinate for one hour.
  3. Pour Cajun King Cajun Fry or cornmeal and flour into a paper bag.
  4. Remove fish from marinade, drop in bag, Shake.
  5. Fry fish in hot vegetable oil until golden. Drain on absorbent paper. Serve immediately.
  6. Chill foods to be fried to as cold as possible ( in ice water or chilled marinades and batters) prior to breading.
  7. The colder the food is when immersed in properly heated oil, the better the seal holding natural juices in and oil out.
  8. Never bread food until the last possible moment.
  9. Shake off excess breading; never overcrowd the fryer; when darkens, strain prior to further use.
